About the Dish

Dan Dan noodles are a classic Sichuan dish with a history that dates back to the streets of Chengdu, China. Originally sold by vendors carrying a shoulder pole (dan dan), with baskets of noodles and sauce on either end, the dish became known for its bold, spicy, and savory flavors. Traditionally, the noodles are served in a rich, numbing chili oil sauce with minced pork, preserved vegetables, scallions, and a touch of Sichuan peppercorn, creating the signature tingling heat of Sichuan cuisine. Dan Dan noodles remain a beloved street food and an enduring symbol of Sichuan’s vibrant culinary heritage.
